  Pineapple Chicken with Masak Merah Gravy

Ingredients:
 
500g/2 pieces

Whole chicken leg, cut into bite-size

˝ packet SERI-AJI® Masak Merah Seasoning
2 tbsp Cooking oil
1

Lemon grass, sliced thinly

200ml

Thick Coconut milk

1 tbsp

Toasted grated coconut (Kerisik)

3

Kaffir lime leaf, sliced thinly

1 cup

Canned pineapple

 

X: mixed together
˝ packet SERI-AJI® Masak Merah Seasoning
150ml Water

 

Methods:

(1) Marinate chicken pieces with ˝ packet of SERI-AJI® Masak Merah
      Seasoning
for about 30 min.

(2) Heat oil in a wok, sauté lemon grass until fragrant.

(3) Add in chicken, stir constantly for around 5 min.

(4) Pour in (X) mixture, stir chicken evenly & bring to a boil. Simmer for
      around 15 min.

(5) Add in coconut milk, pineapple & kaffir lime leaf, stir constantly.

(6) Once the chicken is cooked & the sauce has thickened, turn of the
      heat. Serve warm with rice.
