Pineapple Chicken with Masak Merah Gravy |
Ingredients: |

| 500g/2 pieces |
Whole chicken leg, cut into bite-size |
| ˝ packet |
SERI-AJI® Masak Merah Seasoning |
| 2 tbsp |
Cooking oil |
| 1 |
Lemon grass, sliced thinly |
| 200ml |
Thick Coconut milk |
| 1 tbsp |
Toasted grated coconut (Kerisik) |
| 3 |
Kaffir lime leaf, sliced thinly |
| 1 cup |
Canned pineapple |

| X: mixed together |
| ˝ packet |
SERI-AJI® Masak Merah Seasoning |
| 150ml |
Water |
|
Methods:
(1) Marinate chicken pieces with ˝ packet of SERI-AJI® Masak Merah
Seasoning for about 30 min.
(2) Heat oil in a wok, sauté lemon grass until fragrant.
(3) Add in chicken, stir constantly for around 5 min.
(4) Pour in (X) mixture, stir chicken evenly & bring to a boil. Simmer for
around 15 min.
(5) Add in coconut milk, pineapple & kaffir lime leaf, stir constantly.
(6) Once the chicken is cooked & the sauce has thickened, turn of the
heat. Serve warm with rice.
